MOTHERS NEED CHOCOLATE!

You probably have many heartwarming stories about your Mother's Day experiences. Many people enjoy taking their mother to lunch or dinner or out for the day. Mother's Day ShoesOthers can't see mom in person and rely on the telephone for a nice long visit. The definition of who qualifies as a mother is fairly inclusive as well. Is it the woman expecting a baby? Of course. The woman who bore you? Naturally. The woman who raised you (biological connection or no), certainly. Mothers-in-law, Grandmothers, etc., yup. Your wife of then 7 years who gave you two beautiful daughters? I LOVE MOMOf course she is a mother, but I once made the serious error of saying these unforgivable words on her special day, "Well, your not my mother." I thought I was being humorous... Retribution was swift, terrible and deserved. The Goddess Kali was a pacifist compared to my wife. In one sentence I had taken away my appreciation of all the cooking, cleaning and child rearing. What a faux pas! As I recall after a day spent apologizing, Mother's Day Peanut Butter Cupand the purchasing of a particularly nice piece of furniture, I was finally forgiven. Don't let this happen to you. Mothers deserve their due and what woman doesn't love a little chocolate and a little love. At Woodhouse there are so many ways to make a woman happy. With this month's wine column we were not only trying to find a wine that pairs beautifully with our chocolates but that also enhanced Tracy's recipe for Moroccan Chicken Salad. Mom deserves a beautiful bottle of wine and we've found a Chardonnay that sings from salad to dessert! El Molino is perhaps the oldest vineyard property in the Valley having been first planted to grapes in 1848. Its modern history begins with Reg and Marie Oliver in the 1970's and their first commercial wine release in 1987. El Molino focuses entirely on the two Burgundian classics, Chardonnay and Pinot Noir and produce only about 650 cases of each per vintage. Their dedication shows as both wines are wonderful and consistent vintage after vintage. Now I know what you are going to say; Chardonnay with chocolate? Chicken salad sure, but chocolate? Well, we are nothing if not adventurous and in this case it worked in spades! We tasted the 2009 El Molino Rutherford Chardonnay ($50) and enjoyed its aromas of apricot, apple, spice and clove and its fruit forward palate of apricot, vanilla and Burgundian styled mineral qualities. This is a big chardonnay with an alcohol in the upper 14's and it loves chocolate, better than some Cabernets we have tried. Espresso, Amaretto Almond, Praline Noisette and Hazelnut Cream were exceptional combinations. Dark Raspberry combined with the wine to make a beautiful Kir. Other favorites were Chambord, Buche au Lait, Thai Ginger, Rum Raisin and perhaps the most amazing of all, Sur del Lago. Pure dark chocolate and chardonnay. Go figure. Eat your scrumptious salad, drink your El Molino, delight in some Woodhouse Chocolate, savor your chardonnay, it's all good!

MIXED GREENS WITH MOROCCAN FLAVORS

 

Serves 4

When you ask most women what they want for lunch, they will invariably say, "just give me a salad". Without getting into to the complicated real reasons for that answer, I offer you SALAD! This is a very flavorful combination of a moroccan spiced dressing, chicken, bacon, dates, roasted chickpeas and assorted healthy things. I hope you will feel satisfied and virtuous at the same time (there is so very little bacon - besides I think bacon is good for you). The chickpeas make a good snack all by themselves, and this recipe makes more than you need, so snack away and have a very happy Mother's Day.

Morrocan Chicken Salad

For the Dressing:
1/4 cup fresh lemon juice
1 teaspoon fine sea salt
1 teaspoon sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon dark cocoa powder
1/2 teaspoon smoked paprika (regular paprika will do)
1/2 teaspoon black pepper
1/4 teaspoon turmeric
1 clove fresh garlic, minced
3/4 cup vegetable oil

Whisk all together.

For Roasted Chickpeas:
15 oz. can chickpeas, garbanzo beans, ceci beans, whatever you want to call them.
4 teaspoons olive oil
1 Tablesoon Kosher salt
1/4 teaspoon dark cocoa powder
1/4 teaspoon smoked paprika

Heat the oven to 400 egrees Fahrenheit. Drain the chickpeas and dry them on a paper towel. Discard any stray skins. In a small mixing bowl, toss the chickpeas with the olive oil until evenly coated. Put them in a single layer on a foil-lined baking sheet. Put them in the oven and roast for about 30 minutes, or until a nice dark golden brown. While the chickpeas are roasting, combine the salt, cocoa powder and paprika. When the chickpeas are done, sprinkle 1 teaspoon of this mixture evenly over the chickpeas, moving them around to coat evenly. Save the rest of the salt for the next time you roast chickpeas..

For the Salad:
6 cups mixed baby greens
8 Medjool dates, each cut into 8 slivers
about 12-16 cherry tomatoes, quartered
thinly sliced red onion (about 1/4 of a small onion)
1 roasted chicken
6 slices cooked bacon, cut into 6 smaller pieces each
about 16 sprigs of cilantro

Remove the meat from the chicken. Slice the breasts and shred the leg/thigh meat. In a large bowl, toss the greens with dressing. Use your judgement on how much dressing you want - this recipe makes more than enough. On 4 dinner plates, fan out the chicken breast slices. Drizzle a little extra dressing over the chicken. Divide the greens evenly on the plates. Artistically place the dates, bacon, tomatoes and red onion over the salad. (Add some more of the shredded chicken if you like). Sprinkle some roasted chickpeas over and around the salad and top with a few leaves of cilantro. Stand back, apprieciate your creative expression of salad, then enjoy the sensory application.
